Sancocho is Colombia’s great comfort soup, and in Antioquia the best ones are cooked outdoors over firewood. At La Tienda de Redman we make it that way: in a big pot, over a wood fire, slowly, so the broth picks up a gentle smoky flavor you won’t get on a stove.
When to come
Saturdays, Sundays and Colombian public holidays. It’s the classic weekend lunch in Los Balsos: come with family or friends, sit outside and order the sancocho of the day.
What’s in it
Potato, corn on the cob, plantain, yuca and meat, all cooked together until the potato starts to break down and thicken the broth. Served piping hot with fresh cilantro.
Why firewood
Firewood cooks slowly and evenly and gives the broth a smoky depth. It’s how sancocho has always been made in Antioquia — at family farms, river outings and on New Year’s Day — and it’s how we make it every weekend and holiday.
