Bandeja Paisa in El Poblado, Medellín

The bandeja paisa is the signature dish of Antioquia, the region around Medellín. It’s a big platter meant for a long, slow lunch, and at La Tienda de Redman we serve it complete.

The beans are the heart of it

No good beans, no bandeja. Ours are slow-cooked in a pot over the stove fire until they’re thick and comforting, the way they’re made in paisa homes.

When to come

Saturdays, Sundays and Colombian public holidays, the same days as our wood-fired sancocho.

Tips for first-timers

It’s a lot of food: many people share one between two, or skip the starter. Squeeze lime over the chicharrón, and tear the arepa to scoop up the beans.
